A Journey Of Spicy Snack - Kachori

Kachori is a spicy snack which brings water in your mouth.   Kachori is a snack,  originating from the Indian,  Southwestern Rajasthan state ,  Marwar. It was believed that Marwaris are supposed to have introduced it to the world. This community took it all over the country for trade and commerce. 
Kachori is usually a round flattened ball made of fine flour with a stuffing of baked mixture of yellow moong dal or urad dal,  besan,  black  pepper,  red chilli power,  salt  and other spices. People used  different names for kochuri - kachodi, katchuri,  fried dumpling etc. Kachori are known as the snack of traders.
Kachori is famous among all over in India. It is a food which is available at various types.
In Rajasthani cuisine,  the pyaaj kachori is very famous. One thing is very important in this kachori is onion.  In Jodhpur , Mawa Kachori is famous. It is a sweet dish dipped in sugar syrup. Another type of kachori  is there in jodhpur, is Magar Kachori. The stuffing is made with Mung dal or mung beans that have been soaked and crumbled into a paste.
In Gujarat,  kachori is usually a round ball  made of flour and daugh filled with a stuffing of yellow moong dal, black pepper, red chilli powder and ginger paste. In Delhi,  kachori has another kind of name that is " khasta Kachori " or "Raj Kachori ".
A simple type of kachori is the Nagori Kachori. There is no stuffing involved. Only some salt. It is served with ghee by the sweets halwa.

In West Bengal,  kachori is pronounced as kochuri has a different variation. In W.B , kachori is softer and smaller in size . It is made mostly of white flour and asofoetidal ( hing),  which are often added to make it soft and more tasty. It is mostly eaten as a tea time snack in the morning or evening with tasty potato curry and  Bengali sweets. For Bengali , it is very important food during gossiping. In winter,  another kind of kachori is made that is koraishuti kochuri. Koraishuti is made mostly stuffed with pea, in winter season , is a delicious food for Bengali.
